This past summer, on our trip to the Edinburgh fringe festival we had a lot of great vegan food.
One place we went to for a quick lunch between shows was Holy Cow.
Holy Cow is a charming cafe with wonderful desserts, coffees and their famous vegan burgers. They even bake their own bread. On this trip we wanted to try their carrot lox.
At Holy Cow, the carrot lox is served open faced on fresh baked bread with lettuce, capers, shallots, dill, and house made cashew cream cheese. It's delicious.
We sat in their quiet courtyard enjoying coffees and carrot lox. It was a perfect respite from the festival. A chance to sit and reconnect with one another after marathon theater watching.
We left with full bellies and hearts, ready to catch another performance.
